The award-winning Onyx Coffee Lab is just that. We found the perfect pair with their Costa Rican yellow honey beans from the famed Las Lajas Farm to our La Folie.
We added 2.5 lbs of Las Lajas Yellow Honey processed Columbian coffee to our foeder-aged dark sour blend and let ‘steep’ for 48 hours. This process infuses the coffee’s aromatic essential oils for a giant coffee bouquet but does not impart any bitterness, so you experience something totally new- a tart fruit coffee explosion. We finished it with nitrogen for a cream-like foam reminiscent of the espresso crema!
