We sought out the very best ingredients, sourcing wild honey from the African Bronze Honey Company, a member of the Fair Trade Federation and a certified B-Corp. The Seville orange peel is freshly ground 24 hours prior to the day we brew by the Old Town Spice Shop, less than one mile from our Fort Collins, Colorado, brewery. In the end, we created a big, sweet and citrusy Belgian-style Tripel with thoughtfully sourced ingredients. Belgian Reserve Series. Palo Santo, which translates to "holy wood," is traditionally burned and is believed to have the power to purify and clear bad energy. Our love for the aroma inspired us to utilize it in a different elemental state and see what happens when you infuse. These wooden barrels age our sour beer in varying temperatures, humidity, and vibrations. The terroir of New Belgium, so to speak. Add in another variable by dry-hopping with a rotating blend of fruit forward hops and we created a beer that changes every time we brew it. Le Terroir is a french term meaning “of the earth”.
